As you may already know, I will be spending the Thanksgiving holiday with my daughter in NYC. I had to bake her favorite GF muffins. They really are quite tasty, if I do say so myself. I made 2 dozen so I could have some as well.
I have included the recipe if anyone is interested!
1 cup brown rice flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup sugar
1/2 cup vegetable oil
2 eggs
1/2 cup GF cereal (GF granola or nutty flax are two of my favs)
1 1/2 teaspoon grated orange peel
1 teaspoon vanilla flavoring
1 cup grated zucchini
1/2 cup chopped nuts
1. Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside.

1 cup grated zucchini
1/2 cup chopped nuts
1. Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside.
2. In large mixing bowl, beat sugar, oil and eggs until well combined. Stir in cereal, peal and vanilla.
3. Add flour mixture, zucchini and nuts. Mix well. Pour into lined muffin tin.
4. Bake at 325 F for 35 minutes. Cool completely. YIELD: 12 servings
