I don't have any cards to share today. Instead, I have a few yummy delights fresh from my garden. I have a very small vegetable garden, but it means so much to me to grow my own food. It always tastes better too.
BLT with fresh tomatoes....
Baked Parmesan Zucchini Rounds....
Nothing tastes better than fresh!
Baked Parmesan Zucchini Rounds
Ingredients:
2 medium or one large zucchini
1/2 cup freshly grated Parmesan cheese
Garlic salt and freshly ground pepper
Directions:
Place oven rack in center position. Preheat to 425 F. Line a baking sheet with parchment paper.
Wash and dry zucchini and cut into 1/4 inch thick slices. Arrange zucchini rounds on prepared pan, with little to no space between them. Sprinkle zucchini with garlic salt and pepper. Spread a thin layer of Parmesan cheese on each slice of zucchini. Bake for 15 to 20 minutes, or until Parmesan turns a light golden brown. (Watch these closely the first time you make them and pull them out of the oven early if the cheese is golden before 15 minutes!) Serve immediately.
Amen to that, Nancy! We just have a small garden, too, but those tomatoes are always the best! This year between the excessive rain and various critters our garden isn't doing as well as in past years, but anything is better than nothing!
